How do you bake dinner rolls?

Hey Ranj, I have to prepare my first birthday dinner for my brother and I need to know how to make some really good dinner rolls. Too baked to bake from Vestal, NY

Hey Too Baked, Nothing compares to hot freshly baked rolls right out of the oven. There are several recipes for several different rolls, but here is how to bake your average dinner rolls that most of us picture when thinking of dinner rolls:

1. First unless you're buying premade dough you're going to have to make your own. You can use any yeast bread recipe to make the dough. White or wheat, sour or sweet, whole grain or plain Jane, buttery dough or sourdough--if you can make it into a loaf, you can form it into a roll. If you've got a bread machine or a mixer with a dough hook, mixing dough is easy.

2. Knead the dough. If you have a mixer with a dough hook, you can knead the dough using your mixer. Otherwise, use your hands. Turn the dough out onto a floured surface, such as a large cutting board. Knead with the heel of your hands, turning the dough a quarter turn after every knead.

3. Wait for the dough to rise and punch it. Place the dough back in the mixing bowl, and cover loosely with plastic wrap. Place in a slightly warm spot for ten minutes, and allow the bread time to rise. After ten minutes, punch the dough down.

4. Next you have to shape your dough. To divide a batch of dough into rolls, wait until the dough has risen once, then gently deflate it with your fist. On a clean surface, use both hands to roll the dough out into a log. If it's very flexible, you can stretch it by flicking your wrists and slapping the dough on the counter, but be gentle--you don't want to tear the dough. Use a bench knife, stiff spatula, or serrated knife to divide the log of dough into equal portions. If you want to be exact, use a kitchen scale to weigh each piece of dough. There's a definite technique to shaping dough into perfect rounds, but it's fairly easy to get the hang of it and fun to practice.

5. Placed on the greased pan, far enough apart that they won't stick to each other. Let rise 30 to 45 minutes; the rolls should almost double in size. While they are rising, preheat the oven to 375 to 400 degrees.

6.Finally get baked and bake. Bake the rolls until the tops turn golden brown. This should take about 15 minutes.
